The job of the Speech To Speech operator is to repeat what I say, nothing more. They are not part of the conversation, they can't answer any questions, record the conversation, and they have nothing to write down personal information. Any information given is typed into a computer. Once the call ends, the computer deletes the screen, leaving no trace of the call. So even though a Speech To Speech interpreter is on the line, your call is totally confidential.
